How to grow Salsify & Scorzo?

Salsify & Scorzo History

This is an old European crop with thin pale edible roots. It is also known as Oyster Plant because these roots are supposed to resemble oysters in flavor. It is an easy plant to grow as it is not that far removed from the wild plant.

Soil Preference

  • PH (min/max): 6.5 - 7.5

Salsify needs the usual soil for root crops, deep, loose and fertile, but not too rich in nitrogen. It will fork in stony or freshly manured soil.

How to care for Salsify & Scorzo?

Water

It is important to keep the young plants well watered. Once they are well established they are more independent, but should still be kept evenly moist for best growth.

This is pretty simple, just leave the plants alone, and they will fl ower in their second year. They are insect pollinated, but there are so few varieties this isn’t usually an issue. However they can also cross with Wild Salsify (which commonly occurs in some areas.)
