If you intend to eat the beans when they are green, harvest them while they are still a bit immature ‚ or as soon as they reach full size, but before they color up and turn yellow or black. The harvest period is only about 2 to 3 weeks.

If you want to save the dried beans, leave the pods on the plant until they turn yellow or black and the entire plant has died back. You'll know they're ready when the dry pods shatter easily.
