Edamame soybeans' flavor is nutty, buttery and truly irresistible fresh from the garden and they pack top nutritional value. Cook them quickly, right in their pods for appetizers and snacks, or use like fresh beans in any recipe. We import our seed from Japan, where edamame are a long-standing favorite. If you intend to eat the beans when they are green, harvest them while they are still a bit immature ‚ or as soon as they reach full size, but before they color up and turn yellow or black. The harvest period is only about 2 to 3 weeks.
If you want to save the dried beans, leave the pods on the plant until they turn yellow or black and the entire plant has died back. You'll know they're ready when the dry pods shatter easily.
Soybeans are not only one of the best sources of protein; they also contain a whole range of valuable phytochemicals, with antioxidant and anti-cancer properties.
For consumption, soy beans must be cooked with "wet" heat to destroy the trypsin inhibitors. Raw soybeans are toxic to humans, chickens, and swine.
