Ripening

They are fully ripe about a week after they turn bright-red with an orange-tinged.

The fruit won't usually ripen below 55˚ F, or above 85˚ F.

Sun isn't necessary for ripening, only warmth. Consequently fruits will ripen even in the dense shade in the middle of a plant.

Nutrition:

Tomatoes contain Vitamin C and A (beta carotene) and a whole range of valuable anticancer (and other) phytochemicals (lycopene, lutein, zeaxanthin and more).Research shows that protective effects of tomatoes against prostate cancer and cardiovascular disease result from the synergy of lycopene with other phytonutrients naturally present in whole tomatoes. Lycopene is highest in organically grown tomatoes.
