Sweet-scented flowers have a wide variety of uses.
The sweet-scented flowers of Chamomile are used to make tea which has a distinctive apple-like flavor and fragrance. Chamomile has long been used as a carminative, and as an anti-inflammatory, anti-ulcer remedy to protect gastric mucous membranes. It is also anti-spasmodic, and anti-microbial. Harvest every few days just as the petite daisy-like flowers are fully open, but before the petals dry up.
When and How
Harvest flowers when yellow centers are taller than they are wide. If you harvest more than necessary, dry at room temperature. Flowers may mold if not dried quickly and thoroughly. Some gardeners use a food dehydrator to dry the flowers. Once dry, store the flowers in containers that are airtight.
You should harvest every few days, just as the petite daisy-like flowers are fully open. Leave a few flowers in the garden to set seed, then shake spent plants and they will often self-sow to yield another crop.
